A Boatload of Sweet Potatoes

-2 sweet potatoes
-1 ripe avocado, diced
-2 tsp fresh lime juice
-1/4 tsp shallot, finely chopped
-2 tsp crushed walnuts

-Preheat oven to 380 degrees F
-Poke some holes in the sweet potatoes, and place in glass pyrex before putting in oven. Leave for 50 minutes and let cool
-In a medium bowl, add avocado, lime juice, shallots, and walnuts
-Halve sweet potatoes lengthwise and top with mixture
