Cauliflower Cashew Soup w/ Apple

Chock full of vitamins and minerals, this warming soup will help keep you feeling toasty & satisfied! 

-1 head of cauliflower, bottom trimmed & leaves removed
-1 medium onion, chopped
-1 small pink lady apple, peeled, cored, & chopped
-1/2 C raw cashews
-1/2 C chopped kale, chard, or other dark leafy green vegetable
-1 TBSP minced peeled fresh ginger
-1/2 TSP ground cinnamon
-1/2 TSP ground cardamom
-1/4 tsp cayenne
-sea salt
-1 C plain unsweetened almond milk (optional)

-Chop cauliflower into large pieces, including stem

-In large pot, combine all ingredients except salt, milk 

-Add enough water to cover vegetables, season w/ salt, and bring to boil

-Simmer over low heat til cauliflower is tender, about 30 minutes- let cool slightly

-Puree soup in blender until smooth

-Transfer to a clean pot and stir in the almond milk

-Rewarm over moderate heat, adding more water or almond milk for thinner consistency if desired
