Cauliflower Tabbouleh

Grain free, dairy free, and chockfull of nutrients!

Makes 4 servings:

-1 head cauliflower
-4 tomatoes
-1 cup cilantro, chopped
-1/4 cup lemon juice
-1/4 cup lime juice
-2 tsp garlic powder
-sea salt & black pepper, to taste

-Grate entire head of cauliflower (stem & leaves omitted), so that it resembles quinoa or rice (either in a food processor or by hand). Then place in large mixing bowl
-Dice tomatoes & finely chop cilantro
-Mix together tomatoes, cilantro, and grated cauliflower
-Add in lemon juice, lime juice, sea salt, black pepper, and garlic powder. Mix well.
