-2 cups rolled oats
-2.5 cups water
-1 cup cooked sweet potato or yam (about 2 medium size)
-2 handfuls of organic mixed greens
-1 ripe banana
-2 TBSP maple syrup
-1/2 tsp sodium-free baking powder
-1/4 tsp cinnamon
-1/4 tsp sea salt
-1 tsp vanilla extract
-1 TBSP coconut oil or Olive oil spray
-Place oats, water, sweet potato or yam, banana, syrup, baking powder, cinnamon, sea salt, greens, and vanilla into blender
-Spray your waffle iron with olive oil spray, and pour. Close lid for about 8-10 minutes.
-No waffle iron? No problem! Take a frying pan, melt the coconut oil, and pour in the mixture to make pancakes! Flip when cooked.
-TIP= add more water to make it easier to pour
