Makes 1 serving:
-2 cups chopped, peeled english cucumber ( 1 lg.) -1 cup dark leafy greens
-2 cups seedless green grapes
-1 1/2 cups salted marcona almonds
-1 small garlic clove
-1 tbsp. fresh dill
-1 1/2 cups veggie stock
-1/2 cup extra virgin olive oil
-sliced avocado to top
-Puree ingredients in processor until very smooth. -Slowly drizzle in olive oil with motor running. -Pure on high for 1 min. -Chill for a couple of hours. Serve closer to room temp for full flavor.
-You can garnish with a little extra dill, chopped grapes, or sliced avocado if desired.
